Oatmeal fudge bars

Ingredients

1 cup butter,softened
2 cups brown sugar
2 eggs
2 teaspoons vanilla extract
2 +1/2 cups flour
3 cups old fashioned rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon powder

Fudge layer:
14 ounces condensed milk
2 cups semi-sweet chocolate chips
2 tablespoons butter
1 teaspoon vanilla extract

Method:

Whisk together flour,baking soda,salt and cinnamon.Beat butter and sugar together until light and fluffy for nearly 2 minutes.Add eggs one at a time beating for 1 minute after each egg addition.Beat in the vanilla and add the dry ingredient mixture and mix until combined.Stir in the oats.Set aside nearly 1+1/2 to 2 cups of this mixture.Spread  the rest on a greased baking pan and prepare the fudge layer.

Fudge layer:

In a saucepan add condensed milk,chocolate chips and butter.Heat over low heat,stirring continuously just until the chocolate is melted and other ingredients are combined.Pour the warm fudge mixture over the top of oatmeal layer in the baking pan.
Drop small bits of the reserved oatmeal mixture evenly over the fudge layer.Don't try to spread it,dropping it creates a open lacy pattern allowing the fudge to show through.

Bake in a preheated oven at 180°C for 25 to 30 minutes or until the top is golden brown and the chocolate layer is dull and starting to come away from the sides of the pan.Cool on counter for 2 hours and then refrigerate for 1 more hour before cutting it into pieces.
